Simone Jackson has been using I Can’t Believe It’s Not Butter! in her famous family recipes for over a decade. After being diagnosed with high cholesterol in 1992 at the age of 37, the Mississippi native was at a loss for how to cook her favorite foods with a healthier twist. That is until she discovered I Can’t Believe It’s Not Butter!.
“My neighbor Shannon was the one who first introduced it to me,” said Jackson. “And honestly? I couldn’t believe it wasn’t butter!”
Ever since then, Jackson has included the margarine-based spread in all her most beloved recipes.
But this past week, for her and her husband’s 40th anniversary, Jackson finally decided to sacrifice health for taste.
“I used eight tablespoons of real butter in my famous chicken casserole,” she gleefully told reporters. “I wanted to make something really special for Doug.”
After watching her husband take a bite, Jackson waited expectantly for his reaction. When he said nothing, she prodded him.
“I just told him, ‘It’s not I Can’t Believe It’s Not Butter!.’”
Having not eaten real butter in nearly three decades, Doug was shocked.
“I couldn’t believe it wasn’t I Can’t Believe It’s Not Butter!,” he told reporters. “She never uses real butter.”
Jackson was noticeably disappointed by her husband’s surprise.
“I can’t believe he can’t believe it’s not I Can’t Believe It’s Not Butter!,” she said. “I was really hoping he’d be able to tell the difference right away.”
At press time, reporters decided to stop the investigation, saying ultimately they were too confused to continue.
